YOU WILL NEED:
1 cup All purpose flour + 4 tbsp Self Rising Flour
1 cup Buttermilk
1 Egg (separated the yolk from the egg white)
1 tbsp Sugar
a pinch Salt
1 tsp Baking Powder
1/4 cup Unsalted Butter (melted)
8. And voila! your pancakes are done. You can serve the pancakes with butter and maple
syrup or fruits.
*if you don't have buttermilk, you can substitute it with 1 cup of milk + 1 tbsp lemon juice. And wait for 30 minutes.

THE PROCESS:
1. In a large bowl, mix together the all purpose flour + self-rising flour, sugar,
salt and baking powder. Set a side.
2. In another bowl, whisk all of the wet ingredients (Buttermilk, egg yolk, melted butter).
3. Pour the wet ingredients into the dry ingredients and whisk it until everything combined
well.
4. In another bowl, beat the egg white with a hand-held electric mixer until the egg white
develop stiff peeks.
5. Fold in the whipped egg white very gently into the mixed ingredients, Make sure you don't
deflate the egg and set a side while you preheat your pan (the stiff peeks egg white will
make your pancakes super moist and fluffy). YUM :)
6. Preheat your pan over medium heat and brush it with some butter
7. Using a ladle, scoop out the pancake batter into your hot pan. The pancakes will need
about 2 to 3 minutes on one side or wait until they start to form a little bubbles. Flip them
and cook for another minutes or until both sides are golden brown.
8. And voila! your pancakes are done. You can serve the pancakes with butter and maple
syrup or fruits.
